Ingredients (serves 2)
• 1 cup grated kūmara
• 1 cup grated pumpkin
• 2 tbsp coconut cream
• 2 tsp curry powder
• 200g pork mince
• 1 spring onion, finely sliced
• 1 cup chopped silverbeet or spinach
• 2 tsp soy sauce
• 2 banana leaves or baking paper
Method
• Heat oven to 200°C
• In a large bowl mix together all of the ingredients except for the banana leaves
• Divide the mixture between the two 25cm square banana leaves or pieces of baking paper and fold over to make an enclosed parcel
• Place parcels on a baking tray or roasting dish and bake for 30 minutes
• Remove from oven and served wrapped
