I love to make Egg Muffin Cups when I have an overflow of eggs, or a busy week coming up. Bake a big batch and freeze them to pop into the microwave on busy mornings for a quick and delicious breakfast! These are super easy to customize to your liking or change up each time you make them. Today I did mine with bacon.
Recipe for 6 Egg Muffin Cups
Ingredients:
• 6 eggs
• 6 slices bacon
• olive oil for greasing pan
• 1 cup of favorite cheese/cheeses. I did 1/2cup and 1/2cup mozzarella
• few tablespoons of heavy cream or milk
Directions:
• Pre heat oven to 400°
• If you want bacon, partially pre-cook that.
• Grease muffin pan.
• Line cups with bacon 1-2 slices/cup
• Mix eggs, cheese, and cream
• Pour egg mixture into cups
• Bake for 15-20 min (putting muffin tin on a baking sheet is a good idea for overflow)
Peppers, Tomatoes, Hashbrowns, Sausage and Bread are all great additions or substitutes in this recipe!
