Mediterranean Roasted Red Pepper Sandwich
🥪🍅🥑🥒🫑🧅

Ingredients:

• 2 slices of your favorite bread
• 1/3 cup hummus
• 1 ripe avocado, sliced
• 1 red bell pepper, peeled and sliced
• 1 tomato, thinly sliced
• 1/2 cucumber, thinly sliced
• A handful of arugula
• Pickled red onion

Quick pickled onion:

Thinly slice 1/2 red onion and pour over:

• 3 tbsp boiling water
• 3 tbsp apple cider vinegar
• 1 tsp maple or date syrup
• A pinch of salt
• 1 bay leaf
• 5 whole black peppercorns

Let sit while you prepare the sandwich.

How to make:

Roast the pepper:
Cut in half and remove the seeds. Drizzle lightly with oil and roast at 350°F until soft. Let cool slightly, then peel and slice.

Assemble the sandwich:
Toast the bread and spread hummus on both slices. Layer:
arugula → cucumber → roasted pepper → avocado → tomato → pickled onion → more arugula.
Top with the second slice of bread.

Serve:
Slice and enjoy. Great with roasted sweet potato fries and ketchup on the side.
