• Boil 1 cauliflower and 60g broccoli florets until softened, then drain them VERY WELL and mash them. Set aside to let them cool a bit.
• Mix the mashed vegetables with 1 chopped carrot, 1 chopped onion, ¼ cup chopped parsley, 1 chopped garlic, 140g breadcrumbs, 70g flour, ½ tsp baking powder, ½ tsp paprika powder, ¼ tsp cayenne pepper, ½ tsp dried mint, ½ tsp black pepper, ½ tsp salt, and 1 egg.
• Shape into patties and lightly brush them with olive oil.
• Airfry or Bake at 200C for 30’.
🥛 For the Yogurt Dip: 1 cup yogurt + ½ tsp salt + ½ tsp pepper + ½ tsp dried mint.
