Line a roasting tray with grease proof paper and spritz with low calorie cooking spray. Place the florets from one cauliflower onto the tray, add a halved red pepper cut side downwards, red onion wedges and 2 peeled garlic cloves. Spritz with low calorie cooking spray and cook for 20-25 minutes at 190°C.
Remove the skins from the pepper halves and place all the ingredients into a saucepan with canned chopped tomatoes and 1½ litres hot vegetable stock. Add ½ tsp paprika, simmer for 10-15 minutes and then add 2 tbsp chopped parsley.
Blitz with a stick blender until smooth. Finish with a swirl of fat free fromage frais and a sprinkle of chives.
