How to Make Pumpkin Bread – Simple, Delicious, and Healthy
Today we’re going to make some pumpkin bread and I’m going to teach you how to make it healthy, and it’s really going to taste good too. Now typically pumpkin bread has a lot of carbs and a lot of sweetness to it that makes it more of a treat rather than an everyday dish. But I’m going to share with you how to increase the nutritional value of your pumpkin bread, so it’s more nutritious and healthier than any pumpkin bread you would buy at the store or the bakery.
This pumpkin bread recipe is taken from the healthy treasures cookbook I hope you have this book already. So let’s go ahead and we’re going to put in the flour. Now, as you know, I mill my own flour. That way I get all of the nutritional bang that comes in a kernel of wheat.
Step by Step Guide on How to Make the Best Ever Pumpkin Bread
If you have to eat gluten free, I just want to point out this is Bob’s red mill, all-purpose, baking flour, and you can use this just equally for what I’m using with this flour that I made. So whether you need gluten free or regular, you can still follow this recipe.
Then, you add into your flour your salt, cinnamon, baking soda, nutmeg, and ginger. Now this recipe, if you’ve ever made it before, sometimes it’s just a little bit on the dry side depending on where you get in your pumpkin from. So I’m going to use some oil and four eggs.
We’ll also go ahead and add in the pumpkin. Now the pumpkin is what I prepare myself, cook them up and process my pumpkin for the entire year. I have even dehydrated pumpkin, which means I can add it to anything you bake, anything you cook because pumpkin has very little flavor. But as for the nutritional value, it could rank as high as kale. It just hasn’t hit all of the popular TV shows.
Now I did not put in the Sucanat and instead, I have some homemade sweet potato butter that I’m going to use instead of both of those ingredients. Now the reason why, number one, sweet potatoes are a very healthy vegetable and the sweetness that I make, it is a lot less than what you would buy in the store. I am getting a sweetener into this bread, but without adding the sucanat.
Protein- and Fiber-Rich Homemade Pumpkin Bread
Remember the three things you have to have in a meal or in every dish? It needs to have protein, fiber and must taste delicious. With this recipe, we’ve got lots of fiber from the pumpkin, flour, and sweet potatoes.
There’s going to be some dates that we’re going to add in but I really want to increase the protein This is why I will add in my favorite protein fiber, which is chickpea protein. And it is so creamy. It’s designed to help create a healthy microbiome so that your digestive system will just sing and make you happy
Lastly, we’ll add in some nuts for additional protein. There are also apples, cranberries, and then we’re all set! We just need to put the mixture into two loaf pans, and then it’s good. Bake it until knife comes out clean, and serve it nice and warm.
