Lachha paratha is north Indian flat bread recipe which can be enjoyed with various types of curries. It is called lachha paratha because ‘lachhe’ means layers in punjabi as it is multilayered paratha.
Traditionally lachha paratha is made with all purpose flour in a tandoor. But in this recipe, you can easily make it on tawa at home and can make it more healthy by using whole wheat flour instead of all purpose flour.
Whole wheat flour provides more fibers and nutrients than All purpose flour. Percentage of gluten formation is less in case of whole wheat flour compared to all purpose flour because all purpose flour becomes more elastic when kneeded which develops gluten. So whole wheat flour is a healthy option.
In this recipe, a special technique for making lachha paratha is shown properly with tasty twist. We have used chat masala for making lachha paratha which makes it easily digestible. Ingredients:-
1 cup – Whole wheat flour
1 tsp – Salt
1 tsp- Oil
1/2 tsp – Chat masala
1/4 cup – Water
1 tbsp – Ghee
Instructions:-
1. In a bowl, add whole wheat flour, salt and oil and give it a quick mix.
2. Add water parts by parts to make soft dough and later kneed the dough with the help of knuckles.
3. Once kneeding is done cover it with moist cloth and let it rest for 10 minutes.
4. After resting, make small balls of dough and start rolling to make a roti by sprinkling flour in between.
5. Once the roti is done, sprinkle some oil, whole wheat flour and chat masala on the roti and spread evenly.
6. Then start folding from the edge and start pelating as shown in the video. Keep on pleating till you come to the end.
7. Stretch this pleated dough and join the ends of this pleated dough by making tight circle.
8. Dust some flour and start rolling but do not flip the paratha during rolling.
9. Once rolling is done, paratha is ready to roast on hot tawa.
10. Place the paratha on hot tawa and roast it till both the sides are brownish in color. Apply some ghee on both the sides in between to roast.
And yummy lachha paratha is ready to serve with curry you like.
