Ingredients – serves 1
➖ 1/2 pack microwave sticky rice (130g)
➖ 80g cucumber, cut into batons
➖ 1 can tuna in spring water
➖ 30g light mayonnaise
➖ 1 tbsp reduced-salt soy sauce
➖ 2 tsp sriracha sauce
➖ 2 nori seaweed sheets
Method
➖ Microwave the rice, then mix with the tuna, mayonnaise and soy sauce.
➖ Place half the mixture along the top edge of one nori seaweed sheet, then top with cucumber batons and a drizzle of sriracha sauce. Roll tightly to form a long tube. Repeat with the remaining mixture and second nori sheet.
➖ Slice both rolls into bite-sized pieces and serve with extra soy sauce, if desired.
