Keto glute free zucchini salad

Ingredients:
5 medium zucchini (676 grams)
4 tbsp sour cream
4 tbsp mayonnaise
4 tsp garlic sauce (or grind 3 garlic cloves)
salt

Directions:

Peel the zucchini, and then grind them on a grater with large holes.
Put water in a saucepan over high heat. Add salt. When it starts to boil, put the grated zucchini and leave them on the hot water until they are cooked through, checking on them from time to time.
After boiling, put the zucchini in the strainer, and remove as much water as you can by pressing from time to time with the back of a spoon.
Once drained, transfer the zucchini into a bowl. Add the sour cream, garlic sauce, and mayonnaise.
Mix well. Add additional salt if needed.

The result was good, even for a person like me, who doesn’t like zucchini too much. For the best result, keep it in the fridge for a few hours, preferred over night.
