This Chickpea tuna salad is one of my personal favorites, and a staple lunch dish in my house! This healthy tuna salad combines the crunchiness of green onions and bell peppers, giving a refreshing and flavorful combo as well as the nutty flavor of chickpeas combined with savory tuna, making this dish a go-to for a quick and healthy meal! You can pair this tuna salad with bread, or enjoy it as is!
Chickpea Tuna Salad Recipe:
1 can of tuna
1 cup of bell peppers
1/4 cup of green onions
1/3 cup of mayo
Lemon juice – about 1/4 a lemon
Sprinkle of salt
Cilantro, Garlic Powder, and red pepper flakes – averaged 1 tbs each
1 cup of chickpeas or garbanzo beans
Mix well and serve cold! 🙂
