This is my favorite budget-friendly, 5-ingredient dinner I make for a simple and easy week ahead. I believe anyone can prepare delicious meals—no matter their budget. Butternut Squash at Aldi $1.05/lb | Carrots $1.19 for 2lb | Beans $1,50 (bag 2lb) | Yellow Onions $1.70 (bag 3lb) = about $8 per week (18 Dinner Meals 44 cents for family of 3)

What ingredients do you need for ridiculously delicious and healthy white bean soup recipe?
– White beans: This is the base of the recipe so you’ll need 3-4 cans of white beans. You can use navy beans, Great Northern beans or any white beans will work. Even for convenience purposes, I don’t use canned beans (best you can start with dried beans and soak them overnight instead.
– Butternut squash is a good source of beta carotene, which may slow the eyes’ aging process.
– Did you know that you can eat butternut squash seeds? They are similar to pumpkin seeds, can be roasted and make a great snack!
– Butternut squash is a good source of potassium, which helps keep all of the muscles (including the heart) healthy.
– There’s no butter or nut, but this squash is packed with vitamins A and C.
– Butternut squash is a good source of fiber, potassium and magnesium.

Selecting Tips

Pick squash that’s heavy for its size.

– Onions & carrots together form the mirepoix of the soup base, which are essentially the aromatics that flavor this delicious soup.
– Carrots are rich in beta carotene, which has been shown to boost the immune system’s function. Carrots are also a good source of fiber, which aids in digestion.
– Onions are low in calories and a good source of vitamin C.
– 1 cube vegetable broth. It’s made with simple minimal organic ingredients and has a beautiful rich color that gives the soup a unique taste and look.

All vegan Ingredients:
– 2 tablespoon olive oil
– 1 large onion chopped
– 7 or (2lb) large carrot chopped
– 1 or 2 cubes vegetable broth
– 1 teaspoon sea salt
– 907g (2lb) white beans
– 1 large Butternut Squash

Storage: Store soup in a pot or an airtight container. They will last about 5 days in the fridge.
Freezing Instructions: You can also freeze the soup for up to 4 months. I recommend freezing it in individual portions for easier thawing. To reheat, thaw in the fridge overnight.
