Who’s hungry!? Sometimes healthy eating can be overwhelming, but it doesn’t have to be! Start with the basics. Let me share with you what I’d bring for lunch!
*Tuna Salad Wrap – wraps are better low carb options than bread. If you want to amp it up even more – use a romaine lettuce leaf!
*Cucumber Salad – below is the recipe! Choose veggies you like and will actually eat. If you’re just starting to eat healthy, you have to EASE yourself into it.
*Blueberries & Watermelon – I love fruit! Quick and easy energy sources.
*Soup – Be sure to find a low sodium option that is as natural as possible.
*Cookies – We’re trying to keep our sanity while eating healthy. Eat the damn cookie.
Ridiculously easy Cucumber Salad:
1. Chop cucumbers to your liking (I chop them into baby triangles!)
2. Slice tomatoes into bite-size pieces (I use grape tomatoes)
3. Drizzle olive oil and balsamic glaze (the glaze makes the difference!)
4. Salt & pepper
5. Bon Appetit!
