Yogurt & Eggplant raita (Baingan ka Raita) | Eggplant yogurt salad

Ingredients
• 1 Eggplant
• 1 cup Yoghurt
• 1 tsp Black Salt
• 1 tsp cumin powder
• few cilantro or coriander leaves
• 1/4 tsp Red pepper flakes
• oil for frying

For Seasoning
• 1/2 mustard seeds
• 1/2 tsp cumin seeds
• 2 green chilies
• few curry leaves

Recipe Notes
If you want to roast the eggplant in the oven simply drizzle it lightly with olive oil and put in the oven at 375 degrees. Roast 3-4 minutes on each side.
