Save this Mediterranean Quinoa Salad – it’s my favorite salad to meal prep, and quite possibly my favorite salad ever 🥒🍅🍋

NO SAD SALADS Episode 3: it’s the perfect summer salad and it’s great as a main with chicken or even as a side dish! Trust me, you need to try this one.

Macros per serving: 482 cals/42g carbs/40g protein/17g fat

Ingredients (makes 4 servings)

1 lb/454g chicken breast (you can skip this if you’re serving as a side)
1 tsp each dried parsley, garlic powder, salt and freshly cracked black pepper
Avocado oil cooking spray
¾ cup/135g dry quinoa
1 large tbsp/20g extra virgin olive oil
Zest of 1 large lemon
1 ⅓ cup/225g chickpeas, drained and rinsed
2 cups/270g cucumber, diced
1 cup/190g tomatoes, diced
⅓ cup/50g red onion, diced
⅓ cup/15g fresh parsley, chopped
½ cup/90g feta cheese, crumbled
Juice of 1 large lemon (~45g)
Salt, to taste

Season the chicken breast on both sides with the spices and salt
Heat a large skillet over medium high heat then spray with avocado oil
Sear the chicken on each side for 1 min, then cover with a lid, reduce heat to medium low and cook for 10-12 mins or until cooked through then set aside to cool
Cook the quinoa according to package directions then transfer to a large bowl
While the quinoa is warm, add the extra virgin olive oil and the lemon zest and mix well then let sit for 10 mins
Dice the chicken breast
Add the chickpeas, cucumbers, tomatoes, red onion, parsley, feta, chicken and lemon juice (for meal prep, I prefer to store the chicken separately so I can warm it up a little before serving)
Toss to combine and season with salt to taste
