Healthy, low calories banana bread,
Suitable for Vegan and Vegetarian diet.
Recipe: To make 2 bread loaves or 24 muffins
3 – 5 bananas
440g or 3.5 cups plain flour
150g or 2/3 cup granulated sugar
1 tbsp + 1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
160 ml or 2/3 cup vegetable oil
60 ml or 1/4 cup coconut milk or almond milk or soya milk

Method:
Sieve the flour and set aside 120g or one cup to use later. Add all the dry ingredients to the remaining flour and mix well together. In a separate bowl, mash the banana until soft and almost smooth and pour into the dry mixture. Mix to a consistent blend and add vegetable oil and coconut milk. Continue mixing while adding slowly the remaining flour.
When the mixture is well blended together, share into the two baking pans or into 24 muffin cases. Bake at 170 – 280 degrees Celsius until it is golden brown.
