Today we’re making Chocolate Banana Pancakes! Not only are they flour-less and gluten free, but they’re also packed with protein, fibre, and they’re super delicious! The outside edges are so perfectly crispy and sweet, while the inside is steaming with gooey, savoury, banana chunks and chocolate. After you try this recipe, it’s guaranteed to become a regular around your household! Traditional flap jacks just can’t compete with this – dare we say it – more delicious – healthy alternative!

Ingredients:

2 Eggs
1 Large Banana
1 Heaping tbsp Cacao
1 Tsp. Vanilla Extract
2-3 Tbsps Almond Milk (or milk of your choice)
2 Tbsps flax seeds
2-3 Tbsps coconut oil

Crack 2 eggs into bowl and beat before adding banana and coarsely mash with fork (it’s important to leave the banana sort of chunky). Add cacao, vanilla extract, almond milk, & flax seeds.

Heat up pan & coconut oil on medium heat. Add mixture. Let sit 5-8 minutes before flipping. After three minutes, plate pancake and add topping of your choice (syrup, chocolate drizzle, nut butter, etc.). Because we’re trying to keep this breakfast on the healthier side, for outr drizzle we mixed peanut butter and powdered cacao, then slightly heated up the contents in the microwave to create a warm peanut-buttery chocolate drizzle. Feel free to add chocolate chips to this recipe!
