Hey Guys! Having breakfast meals prepped ahead of time will make your mornings so much easier. These freezer breakfast burritos and egg muffins are packed with vegetables and protein and can be made with meat or vegetarian. You pick whatever ingredients you want according to your taste.
Part of these will go in the freezer, and part in the refrigerator. When you’re ready to eat, pop in the microwave for a quick and healthy breakfast. They can also be eaten for snack, lunch or dinner.
Breakfast Burritos Recipe
– 12 eggs
– 1/2 cup of milk
– 1/2 green pepper, chopped
– 1/2 onion, chopped
– 1 cup of ham or meat of choice
– 1/2 cup of salsa
– 1 cup of cheese
– 1 tsp. of sea salt
– 1/2 tsp. of pepper
– 1/2 – 1 tsp. of garlic powder
– soft tortilla shells
1. Saute (cook) green peppers and onions.
2. Whisk the eggs, milk and spices together and scramble on the stovetop.
3. Mix any veggies, meat, salsa and cheese into the seasoned eggs. Start filling the tortilla shells.
4. Cover the burritos with saran wrap or parchment paper.
5. Stick in the freezer or refrigerator.
6. To warm: wrap in a wet paper towel and warm in the microwave. From the refrigerator: warm 45 seconds – 1 minute.
– From the freezer: warm 1 minute to 1 minute 30 seconds.
(I usually take 4-5 burritos out of freezer the night before and put in the refrigerator to start thawing.)
Egg Muffin Recipe:
– 6 eggs (or 7 if you overfill like I did)
– salt & pepper to taste
– 1/2 tsp. of garlic powder

– 1/2 green pepper, chopped
– 1/4 onion, chopped
– 1/4- 1/2 cup of ham
– 2 mushrooms
– cherry tomatoes
– shredded cheese
1. Preheat oven to 350 degrees Fahrenheit.
2. Whisk eggs and spices together.
3. Spray muffin tin
4. Fill bottom of muffin tin with chopped veggies and meats of choice.
5. Top with shredded cheese.
6. Fill each muffin cup with egg mixture 3/4 full. Finish filling muffin cups with any leftover egg mixture.
7. Bake at 350 degrees Fahrenheit for 20 minutes or until eggs are set.
8. After cool, place in a container in the refrigerator.
9. To warm: cover with wet paper towel and heat for 45 seconds to one minute from the refrigerator. Lasts up to 5 days in the refrigerator.
