Ingredients:
Roasted Red Pepper Soup:
• 3 Red Bell Peppers
• 2 Tomatoes
• 4-6 Garlic Cloves
• 1 Onion
• 1 cup Veg Stock
• 2 tbsp Butter
• 1 tbsp Olive Oil
Method
Roasted Bell Pepper Soup
1. In a lined tray spread out the red bell peppers, tomatoes, garlic and onion.
2. Brush the vegetables with olive oil, mix and Roast at 180 degrees Celsius for 30 minutes until charred.
3. Cover and Let it rest for 15 minutes before deskinning.
4. Now put the bell peppers, tomatoes, onions and garlic in the mixer grinder and make a smooth mixture out of them.
5. In a pan, add butter, olive oil and once the butter has melted, add smoked paprika powder, the bell pepper mixture created and Mix it well.
7. Now add the veg stock, add salt and pepper. Let it come to a boil and then turn off the flame.
8. For Assembling it, begin with pouring the soup in a bowl, garnish with cherry tomatoes, cucumber, watermon seeds and basil leaves.
9. Top it with red bell pepper and Serve it with the cheese croutons.
