Broccoli Turkey Soup:

1 Large Cooking Onion (Diced Finely)
2 T. Salted Butter
4 Broccoli Heads (Washed and Broken to Pieces)
1 T. Salt

½ t. Pepper
5 Cups Milk

½ Cup Cream
Pre-cooked Turkey or Chicken (Cut into bite sized pieces)

– On Medium heat in pan (I like Cast Iron) fry Diced Onion with Butter for 5 minutes (Lid ON to keep steam in to prevent browning – this allows for a lighter coloured soup). Stir a few times during cooking and replace lid to continue cooking. Add largest pieces of Broccoli and Salt and Pepper to Onions and Stir (reserve 1 1/2 Cups of tiny pieces of Broccoli to float in soup). Replace lid and cook til broccoli is very tender.

– Plug in blender. Place ½ the broccoli/onions in blender. Pour in half the milk and blend. Get out medium soup pot and pour soup blend in. Repeat blending step with remaining broccoli/onion and milk.

– Add Precooked Turkey pieces. Stir and place lid on pot.
– Place pot on low heat and allow to simmer for 1-3 hours. Stirring every ½ hour and turn heat down if necessary.

– Near serving time add ½ cup cream. Taste. Add extra milk to thin soup to preference.
– Serve and Enjoy.

Homemade Flatbread:

2 Cups All Purpose Flour
1 T. Parsley
2 t. Onion Flakes
½ t. Salt

¼ t. Pepper
¼ Cup Olive Oil Mixed with 1 Cup Warm/Hot Water
Extra Hot Water

Extra Olive Oil

– In large mixing bowl measure flour and spices. Stir and make well in center. Set up Hand Mixer with Dough Hooks. Pour into well Oil and Hot water. Put mixer hooks into the well center and mix the dough, working in a circular motion outward gradually grabbing more flour. Dough should form a ball and be only a bit tacky. You can add 1T of extra hot water to dough if/as needed while mixing.

– Place 2 dishtowels over bowl and set in a warm place for 50-60min.
– Heat flat griddle on to 350F

– Get out rolling pin and clean a smooth counter surface area to roll out dough.
– Put 1T. Oil on counter and spread with hands
– Now that your hands are oiled too uncover bowl of dough and grab a 2 inch portion. Don’t over work dough. Just quickly form into a simple ball and then place on oiled counter and roll as flat as possible. Peel dough up quickly and place on griddle. Let cook for approx. 5 min. Check under bread to see if it’s beginning to brown in spots. Flip. Cook on other side 5 minutes. If your griddle is large enough made 2 or 3 flatbreads at a time.
– Enjoy with soups, eggs, stir-fries, etc.
