INGREDIENTS • 1 cup flour • 1 egg • ½ cup desiccated coconut • ½ sugar • ¼ milk • ½ tsp baking powder • 3 bananas • Oil • Icing sugar  METHOD Mix, flour, desiccated coconut, sugar and baking powder in a bowl. Add egg and milk and mix again. Put several bananas in the mixture and fry. Sprinkle with icing sugar to serve.

INGREDIENTS • flour 250g • sugar 150g • Seed oil 100g • 3 bananas • 2 eggs • lemon • 1 pck baking powder  METHOD Peel the bananas and put them in a blender together with sugar, juice and grated lemon zest, and mix well and add eggs, vegetable oil and mix again. Then add flour and baking powder, blend again for a few seconds. Pour the banana mixture into the cake pan and bake at 180C/350F for 35-40 minutes.
