vegan mince
1 white onion
3 garlic cloves
4 mushrooms
1 tin chopped tomatoes
½ cup red lentils
½ cup green split peas
Pasta
Veggie stock cube
Oregano
Black pepper and salt
Fry veggies and mince in oil for a couple of mins
Add in pre-soaked lentils and split peas (soaked in water w/ vegetable stock cube)
Add chopped tomatoes
Season with oregano BP+S
Allow to simmer
Serve when as thicc as desired

VEGAN COUSCOUS BURRITO BOWL THING

1 packet of couscous
a handful of spinach and kale
A couple of mushrooms
a quarter of a courgette
1/2 a red onion
1/2 a tin of red kidney beans
caramelised onion hummus
quorn pieces
turmeric
black pepper
paprika
cajun seasoning
garlic
salt

1)prepare couscous according to packet and cover to keep warm
2) cut up all veg (minus the greens) and begin to fry in a pan, after 2-3 mins add in the red kidney beans and pour a small amount of water in the pan.
3) Season with 1 teaspoon of turmeric, black pepper & paprika
4) cook until the water disappears then place to one side
5) Prepare garlic salted kale and spinach by placing a large handful of both into a pan and fry with some water, season with 1/2 teaspoon of salt & garlic until spinach is wilted
6) place quorn pieces in small amount of oil on a frying pan and add a small amount of water to the pan, coat the pieces in cajun seasoning and stir them around each other, continue this for 10 minutes or until the quorn is softened
7) add all elements to a bowl and add a dollop of hummus!

Air fried potatoes w/ turmeric & black pepper
1 red pepper
A handful of spinach
A handful of mushrooms
1/2 an aubergine
1/2 a tin of chopped tomatoes
2 garlic cloves
Paprika ‘Season all’ seasoning

1) cut and lightly fry all the veg for 10 mins (except potato which will be cut into wedges had seasoning shakes onto it and be cooking away!) 2) chuck some chopped tomatoes onto your frying veg
3) season to taste (I use about a teaspoon of paprika & 1/2 for season all)
4) allow to simmer & thicken for 5-10 minutes
5) serve all together and add a bit of hummus if you’re feeling wild
