My variation on one of my favorite salads.
Ingredients:
4 cups shredded cabbage red or green (I prefer a mix)
1 red bell pepper seeded and diced
1 cup shredded carrots
2 to 3 chicken breast such as rotisserie
1/2 cup scallions
1/2 cup cilantro
1/2 cup roasted peanuts
For the Sauce:
3 tablespoons of peanut butter
2 tablespoons of soy sauce
I /2 of to one lime
Juice
1 tablespoon of
Rice vinegar
1 teaspoon of sesame oil
1 clove of garlic
Mix all of the ingredients into a bowl, make the sauce, toss into the salad and serve!
