Healthy broccoli salad. Vegan broccoli salad. It is tasty, you will want to eat it everyday! You can make your own variation by adding your choice of fruits, seeds or other vegetables to your broccoli salad, depending on your preference or what is available in your area.

Ingredients:

– 1 medium size fresh broccoli
– 1 pomegranate
– 1 carrot
– 7 dried prunes
– 80g (2.8 oz) raw uncooked cashew nuts
– 50g (1.8 oz) mixture of pumpkin seeds, sesame seeds, sunflower seeds and flax seeds (save half for the salad dressing)
– 2 to 2.5 tbsp or 30 – 40 ml Apple cider vinegar
– 100 ml (3.38 oz) of water
– 1 tbsp honey

Tools:
Smoothy machine or blender
Salad bowl
Salad spoons
Hand grater – for carrots
Knives
Cling film

HOW TO PREPARE THE DRESSING:

In the blending or smoothy machine, blend smooth the following ingredients:

water, apple cider vinegar, honey, cashew nuts and half of the seeds mixture of pumpkin seeds sesame seeds, sunflower seeds and flax seeds (set aside the remaining half of the mixed seeds for adding to the salad)

PREPARING THE SALAD

Cut the fresh broccoli to small bite size florets, removing the stem. Rinse well with clean water, drain and set aside

Shred one carrot and set aside

Remove the stones in the dry prunes, cut into small pieces and set aside

Remove the seeds of one pomegranate and set aside

In a salad bowl, mix together all the prepared ingredients above, including the remaining half of the mixture of dried seeds (pumpkin, sesame, sunflower and flax seeds) and add the salad dressing.
