If opening up a red and white can is the only way you’ve ever “made” soup, you may be wondering just how to make tomato soup. Fortunately, it requires very minimal cooking skills and the end result will be a healthy creamy tomato basil soup that’s good enough for company. Did you know that tomatoes are on many lists of the healthiest foods for skin? Not only are they good for skin, tomatoes contain the four major carotenoids (alpha and beta-carotene, lutein, and lycopene) which help maintain eye and vision health, boost immunity, and lower inflammation.
Unlike many fruits and vegetables, COOKED tomatoes are considered even healthier to consume than raw. That’s all due to a 2002 study that found that cooking tomatoes for 30 minutes at 190.4 F increased lycopene by 35%. While the cooking process reduces the vitamin C levels of tomatoes it also increases their antioxidant levels by 62%.
More recent research into the nutrient benefits of tomatoes found that ORGANIC tomatoes contain higher levels of phenolic compounds than conventional tomatoes. Phenolic compounds are a type of antioxidant associated with reduced risk of cardiovascular and degenerative diseases, and even some forms of cancer.

If you want creamy tomato basil soup that’s vegan, simply use vegetable stock as your base and omit the collagens powder.
