Whole Green Moong: 1/2 cup (soaked overnight)
Rolled/Instant Oats: 1/2 cup (soaked in hot water for 15 mins)
Garlic: 3–4 cloves
Green Chilies: 1–2 (adjust to taste)
Eno / Fruit Salt: 1/2 tsp
Water: A splash (to activate Eno and adjust consistency)
Veggies & Seasoning:
Onion: 1/4 cup (finely chopped)
Capsicum: 1/4 cup (finely chopped)
Carrot: 1/4 cup (grated)
Cumin Powder: 1/2 tsp
Coriander Powder: 1/2 tsp
Salt: To taste
Stuffing & Cooking:
Paneer: 2–3 thick slices (cut to fit your toaster)
Oil/Ghee: 1–2 tsp for greasing
👩🍳 Step-by-Step Instructions
1. Blend the Base: Drain the soaked whole green moong and soaked oats. Add them to a blender along with the garlic cloves and green chilies. Grind into a smooth, thick batter (add minimal water if needed).
2. Mix Veggies & Spices: Pour the batter into a mixing bowl. Add chopped onions, capsicum, grated carrot, salt, cumin powder, and coriander powder. Mix well.
3. Activate: Add the Eno (fruit salt) on top of the batter, sprinkle a few drops of water over it to activate, and give it a gentle, quick mix until fluffy.
4. Prep the Toaster: Grease both inner sides of a double-sided gas bread toaster with a little oil or ghee.
5. Assemble:
Pour a layer of batter into one side of the toaster.
Place a slice of paneer right in the middle.
Cover the paneer with another layer of batter to seal it.
6. Toast to Perfection: Close the toaster latch. Cook on low-to-medium heat for about 8–10 minutes total, flipping frequently so both sides cook evenly until golden brown and crispy.
7. Serve: Slice diagonally and serve hot with green chutney or tomato ketchup!
