Today I’m sharing with you a spicy pinto bean recipe that is perfect to add to your meal prep ideas list:)
The recipe is originally inspired from a thug kitchen flauta recipe.

I’ve tweaked ingredients a bit to add more protein and have started with dry beans to help with cost and sodium
All you need is
1 cup dried pinto beans
Water to soak and cook beans in
1/2 fresh jalapeño
1 cube not chickn bouillon cube
Or!
1 can pinto beans

Soak beans at least 4 hours- or ideally overnight
Drain and rinse
Add to a sauce pan- cover with water. Add an additional 1-2 inches of water
Bring to a boil- then simmer for 1.5 hours or until very tender.

Drain beans and let cool a bit

Add the following ingredients

1 can organic sweet corn
7oz can green chili’s
1/2 tablespoon cumin
1 teaspoon salt
1 teaspoon red pepper flakes
1/2 white onion and 2 cloves of garlic. Chopped and sautéed in olive oil until soft and golden.

Mash with a potato masher until you achieve smooth ish consistently. I like a little bit of chunk going on.

Enjoy as a flauta, taco salad, stuffed pepper, or even on top of nachos!
