Crockpot Chicken Stew:
Ingredients:
2-3 chicken breast
2-3 garlic cloves
32 oz chicken broth
15 Red potatoes
8 oz of baby carrots (half a bag)
1/2 cup lite soy sauce
1/4 cup honey
1/4 cup ketchup
1 tsp red pepper flakes
1 tsp oregano
1/2 tsp black pepper
1/4 tsp parsley
1 tbsp garlic powder
Salt as needed
Directions:
1. Throw all liquids and seasoning into a large crockpot
2. Then add-in carrots, sliced red potatoes, chicken and minced garlic
3. Set to high and cook for 3-4 hours or low and cook for 6-7 hours
4. On the last hour of cooking pull the chicken out and shred it, then throw back in to cook for the remainder of the time.
Turmeric Chicken:
Ingredients:
1 tbs olive oil
1/4 tsp black pepper
1/2 turmeric
1/4 tsp garlic powder
Salt to your liking
2-3 chicken breast
Directions:
1. Combine the olive oil and all the seasonings together and coat the chicken thoroughly
2. Cook at 400F for about 30 minutes or until chicken is cooked through
Turkey Mexican Bowl:
Ingredients:
2 lbs ground turkey
1 can of white corn
1 can of black beans
1 tbs garlic powder
1 tbs cumin
1/2 tsp black pepper
1/2 tsp paprika
Salt to your liking
Directions:
1. Add ground turkey to a pan and add in all seasonings
2. When the ground turkey is cooked through add the corn and beans and cook for an additional 3-5 minutes on a low-med heat
3. Make sure to serve with rice, cilantro, red onion and salsa
Mango-Avocado Salsa:
1 mango
1/2 avocado
1 lime
1/4 cup red onion
Cilantro
Salt and pepper
1/2 tsp garlic
