I have been on a Keto diet for almost a year now and today I will share one of my bulk breakfast recipes. This recipe is enough for the two of us for five days.
For this recipe you will need:
3 tablespoons of avocado or olive oil
1 yellow onion
Himalayan salt
Black pepper
5 mushrooms
1 pound of ground pork or beef
Dried thyme leaves
Garlic powder
Oregano
Dried savory
Cumin
And for later some butter and a couple of eggs
Start by preheating the avocado or olive oil in a pan under medium heat. Add the chopped yellow onion with 2 pinches of Himalayan salt and black pepper to taste. Mix well; cover with a lid and sauté the onions for 15 minutes under medium heat. Steer the onions a couple of times to make sure they don’t get burned. After 15 minutes, add the chopped mushrooms, mix well, cover and cook for another 15 minutes. And just like with the onions, make sure to steer a couple of times. Next, add the ground pork or beef and start breaking it down with a wooden spoon, as you would do if you were making chili. Then add a pinch of each dried thyme leaves, garlic powder, oregano, dried savory, cumin and a couple of pinches of salt. And if you used garlic salt and not powder, do not add extra salt. If the chunks of ground pork or beef are still too large, now it should be easier to break them down even to smaller pieces.
Cover the pan with a lid and cook for 20 minutes under medium heat. During the 20 minutes, make sure to steer it every 7-8 minutes or so. After 20 minutes, crack open the lid, lower the burner to low and let it simmer for 10 minutes.
When you are ready to make breakfast, melt a square of butter and add 2 scrambled eggs. Then add a few spoonsful of the mixture on the top of the eggs cover and cook under low heat until the eggs are cooked. Serve and enjoy!
