Part 3 of my EASY Vegan QUARANTINE COOKING Ideas!! Today we make Easy Homemade Bread and 2 vegan spreads!! A Cherry Chia Jam, and a Roasted Red Pepper Tapenade. The bread recipe is the Minimalist Bread recipe from my cookbook Be Vegan – Skip the Diet, Just Eat Healthy (www.veganmichele.com/ebook). CHERRY CHIA SEED JAM:
1.5 cups frozen sweet cherries
1 tsp vanilla extract
1 tbs lemon juice
4 tbs chia seeds
3 to 4 tbs maple syrup

In a medium sauce pan heat the cherries and lemon juice over a medium heat. Bring to a simmer and begin mashing with a fork or potato masher for a few minutes.

Turn off heat, then add in vanilla, chia seeds, and maple syrup. Combine, and then transfer to a glass jar with lid. Place in the fridge for 2 to 3 hours to solidify.

Option to make a smoother version by placing the contents into a food processor and pulse till a smoother jam consistency comes. I like this smoother option best.

Enjoy atop the freshly baked bread!

ROASTED RED PEPPER TAPENADE
3 garlic cloves
1/2 cup raw almonds (soaked and drained)
12 oz. roasted red bell pepper (drained very well
Spices to taste:
I used himalayan salt, garlic salt, smoked paprika, and nutritional yeast

Place all ingredients into a food processor and process until you reach your desired consistency (more chunky or more smooth). Store in a glass jar with lid.

Enjoy atop the freshly baked bread!
