I learned a lot on how from Daniel on how to use different hacks to make Mexican food healthy and here are some of my notes:
• Cook meats in the oven or slow cooker to reduce calories & fat (since you don’t have to use oils)
• Switch to cactus/nopal tortillas (fewer carbs and fewer calories)
• Add/mix portobello mushrooms, zucchini and veggies to meats you cook to add more volume (adding more food with few calories to feel fuller)
For Healthy Nachos:
• Use 16oz of the leanest ground chicken or turkey you can find as your meat + & add 1oz of chorizo to add flavor & fat (Only 1oz is enough to add flavor & won’t add much fat at all)
• Buy baked tortillas for the nachos (no added oils so fewer fats)
• Or bake your own tortilla chips without oil
• For the cheese: Daniel has a recipe with carrots, potatoes & nutritional yeast on his book.
• To make a healthy sour cream mix: Infuse fat-free greek yogurt with lemon, garlic, salt (You won’t taste the difference)
Breakfast Tips:
• Switch from whole eggs to egg whites
• Add veggies and canadian bacon (It’s the least fatty one) to your eggs
• If you do want full eggs, do: 4oz egg white : 1 full egg ratio
Cheese Hack:
• Mix 1/2 shredded egg whites & 1/2 shredded queso fresco to reduce calories in cheese
• Switch to brown rice for more fiber (Will make you feel fuller & eat less)
• Switch to Canadian bacon: it’s the center cut and has less fat vs other cuts
• Switch from lettuce to kale, spinach and mixed greens (these greens have more nutrition than lettuce)
• Instead of dressings switch to vinaigrette and salsas
Best cooking methods for less fat:
• Oven
• Slow cooker
• Cast iron pan
If you love “crunch” in your food and salads add these vegetables (that are low calorie)
• Watermelon
• Jicama
• Cucumbers
Meal prep hack
• If your food is 2-3 days old and tastes stale – add parsley – it will freshen up your food & make it taste fresh again
Favorite sauces to add flavor:
• Herdez – roasted salsas
• Cholula
• Tapatio
• Tabasco (chipotle flavor)
Try these high protein plant-based pastas:
• Black bean pasta
• Garbanzo pasta
• Red lentil pasta
Extra tips:
• Buy packaged hummus as a quick low-calorie snack with veggies (like bell peppers)
• Add a paper towel on top of your spinach pack (or other veggies) so they last longer & don’t spoil fast (which paper towel every 2 days)
