Easy recipe for healthy spelt bread.
In case of a candida diet you may also use cream of tartar instead of yeast.

0,4 kg (3,5 cups) spelt flour
0,1 kg (1,1 cups) rye flour
50ml (3 tbsp) water
21g (0,5 cube) yeast or cream of tartar
1 teaspoon of salt
400ml (1,7 cups) carbonated water
1 tablespoon olive oil
Seeds (optional)

First mix spelt flour with rye flour. Then, in another bowl, dissolve yeast in warm water. Pour the mixture on the flour and combine it some flour with. Leave it for 15 minutes to rise. Add salt and water and knead. Add olive oil and seeds, then knead again. Transfer the dough in to the baking tray and leave it for 30 minutes to rise. Finally Bake for 45 minutes.
