Lockdown recipes: Leftover Roti recipes, Indian Roti/ Paratha / Tortilla – Part 2

Hey friends, today we are again making 2 fantastic, tasty recipes using roti or paratha. We already shared with you 2 such snack recipes earlier, in another video. You can also use leftover roti, paratha or tortilla for these recipes.

In the first one, we are making a Paratha chilla combination using high protein gram flour. The protein in the gram flour and the goodness of whole wheat paratha or roti make this a quick, healthy breakfast. It just takes minutes to prepare, and is so healthy and filling.

The second snack is my favourite. Here, we make a quick, mildly spicy tomato sauce, and a creamy, cheesy corn filling. And using these components we make a delightful dish, similar to an enchilada, but without oven. Everything is done in the skillet on the stove. It is very easy and quick to put together. The tangy, flavourful sauce complements the cheesy filling very well. The roti / paratha absorb the goodness, flavours, and deliciousness of the sauce, and become soft. The tomato sauce thickens up beautifully into a gorgeous gravy.

You can also use leftover cooked veggies or meat as filling in the second recipe. Both these snacks are great ways to use up leftover Rotis and even some leftover veggies or meat. And they are amazing for breakfast, or a light snack anytime of the day.

Serve warm, with your favourite accompaniments, and enjoy a delightful breakfast or snack.
