This quick simple refreshing salad is super healthy and tasty. My whole family loves this recipe.
Ingredients:
2 cups chicken stock
1 cup quinoa
1/2 cup green peppers, diced
1/2 cup red peppers, diced
1/2 cup cucumbers, diced
1/4 cup red onions, diced
1/4 cup black olives, diced
3 ounces reduces- fat feta cheese
Dressing:
1/4 cup lemon juice
2 tablespoons olive oil
1 teaspoon minced garlic
1/2 teaspoon basil
1/2 teaspoon oregano
Pepper to taste
1. Wash and drain quinoa. Add 2 cups chicken stock to pot and 1 cup quinoa. Turn the heat up to high, and bring the liquid and quinoa to a boil. Once it has reached a full boil, turn the heat down to medium-low, place the lid on the saucepan, and simmer the quinoa for 15 minutes, or until all of the water is absorbed and the kernels have “popped open.” If there is a little bit of liquid in the bottom of the pan, you can remove from the heat but leave covered for 5 minutes for the remaining liquid to be absorbed.
2. Chill the cooked quinoa in the fridge for at least 2 hours.
3. Dice 1/2 cup green peppers, 1/2 cup red peppers, 1/2 cup cucumbers, 1/4 cup black olives & 1/4 cup red onions.
4. Prepare your dressing. Squeeze 1/4 cup lemon juice, mince 1 teaspoon garlic, 1/2 teaspoon basil & 1/2 teaspoon oregano. Combine 2 tablespoon olive oil, lemon juice, garlic, basil, oregano and pinch of pepper and mix well.
5. Combine the quinoa, red and green peppers, cucumbers, olives, red onion, dressing and feta cheese. Mix well and serve.
