Bombay Sandwich, is a Mumbai street side snack – Spicy mint and coriander chutney with boiled beetroot and potato, onions and tomatoes and homemade sandwich masala, top with cheese if you like and sandwiched between layers of bread and you’re in for a delicious treat.
1) Grind together some mint leaves, coriander leaves, cumin powder, green chillies, peanuts and salt with two tablespoons of water, for your chutney.
2)Steam cook some potatoes and beetroots and slice them roughly. Chop onions, cucumbers and tomatoes into thin slices and keep them ready.
3) For the sandwich masala, mix in some cumin powder,black pepper powder, dry mango powder, chat masala and black salt.Skip any that you don’t have on hand. Alternatively, just use salt and pepper to flavor your veggies.
4) Layer the bread slices and smear a generous amount of butter and chutney. Starting with the potatoes, stack up your layers of veggies, and top off with a layer of shredded cheese, if adding.
5) Sprinkle the spice mix over each layer of veggies. Top off with another slice of bread and enjoy as is, or toasted, with a spicy tomato ketchup.
