Hi everyone! I wanted to share a few delicious recipes that are a life savior for people who spend a lot of time at home during quarantine, behind their desk or often have a sweet tooth, yet want to stay healthy and fit. Some time ago I decided to do the GOOP detox but being the biggest foodie ever didn’t make my diet easy. So I dug into many healthy snack ideas to help my case and found so much inspiration. COCO Berry cupcakes
Ingredients (for 6 cupcakes):
-1/4 cup crushed almonds or almond flour
-coconut yoghurt
-2 tbsp coconut sugar
-2 tbsp melted coconut oil
-fresh berries
Mix the crushed almonds or flour with the coconut sugar and the coconut oil in a bowl. Line a muffin tin with paper or silicon muffin cups and put the mixture in each cup so that it fully covers the bottom of it. Put 2 tbsp coconut yoghurt on top of each cup. Lastly, sprinkle fresh berries of your choice and put the muffin tin in the freezer for at least 12 hours. Before you eat one of those frozen delights, make sure you wait 5 minutes so that the paper cup peels off easier.

Black bean brownie
Ingredients:
-2 cans black beans-drained and rinsed
-2 tbsp cocoa powder
-1/2 cup (gluten free) oats
-1/4 tsp salt
-1/2 tsp baking powder
-1/3 cup honey, agave or maple syrup
-2 tsp vanilla extract
-1/2 cup chocolate chips or cocoa nibs
Preheat oven to 190 or 200 degreess C. Combine all but the chips/nibs in a food processor or a blender. Stir in the chips by hand. Pour the mixture into a metal baking tray. Bake for about 45-50 minutes. Cool at least 10 minutes before trying to cut it into pieces.

Spicy roasted chickpeas
Ingredients:
-2 cans of chickpeas-drained
-2 tbsp extra virgin olive oil
-1 tbsp paprika powder
-1 tbsp onion powder
-1 ½ tsp garlic powder
-1 ½ tsp brown sugar
-1/2 tsp chili/ cayenne powder
-1/2 tsp freshly ground pepper
Preheat oven to 220 degrees. Mix the spices in a jar. Dry the chickpeas on a towel and throw away the fallen skins. Add the chickpeas, olive oil and almost all of the spice mixture to a bowl and mix them all together. Roast them for 20 minutes. Add the rest of the spice mixture on them while flipping them over with a spatula. Roast for about 15-20 minutes more. Store in an air-tight container or a paper bag (preferably) after they have cooled down completely.
