A healthier version of edible cookie dough.

Ingredients:
1 15 oz. can chickpeas, drained & rinsed
1-2 tbsp. honey or maple syrup
2 tbsp. nut butter (I used 1 tbsp. each almond butter & peanut butter)
1 tsp. vanilla extract
a few shakes cinnamon
pinch of salt
1/3 cup cacao nibs or chocolate chips

Place all the ingredients except the chocolate chips or cacao nibs into a food processor and process until smooth. Add more honey or maple syrup if necessary. Scrape dough into mixing bowl and mix in chocolate chips or cacao nibs. Eat! Yum!

This would probably be good with macadamia nuts and cocoa butter chunks (in place of chocolate chips), but I haven’t tried it that way yet.
