Want to lose weight without sacrificing delicious food? This Primavera Stuffed Chicken Breast Recipe is easy to make, low in calories, and tastes great. I stuffed mine with zucchini, yellow bell pepper, red onion, and tomato, but you can use whatever vegetables you prefer.

FULL RECIPE
4 Chicken Breasts
1 Yellow Bell Pepper
2 Tomatoes
1 Zucchini
1 Red Onion
2 tbsp Olive Oil
½ cup Shredded Mozzarella Cheese
2 tbsp chopped Parsley
Salt and Pepper to Taste

Cut the onion, pepper, tomato and zucchini into thin slices, roughly the width of your chicken breasts. Cut horizontal slits in each of the chicken breasts. Stuff each slit with a slice of onion, pepper, tomato and zucchini. Drizzle olive oil on all of the chicken breasts, season with salt and pepper, and sprinkle them with mozzarella cheese. Bake at 400 F for 25 minutes, or until the chicken is no longer pink inside and the cheese is melted and starting to brown. Garnish with parsley and serve!
