Bored of the regular bread sandwiches and bread toasts in breakfast?
Here is a easy variation packed with veggies, egg and bread.
Ingredients:
Bread – 6 slices
Egg – 3
Onion – 1 (Sliced)
Garlic – 1 tsp
Green Chilles – 2 (finely chopped)
Capsicum – 1 (Sliced)
Potato -1 (Sliced)
Carrot -1 (Sliced)
Cucumber – 1/2 Cup (Sliced)
Green Peas – 1/2 Cup
Salt – to taste
Pepper – 1 tsp
Oil – 3-4 tbsp
Method
Shred the bread slices to bitsize pieces.
Add the potatoes, carrots and beans to a pan and par boil for 4-5 mins
Drain the veggies and keep aside
Heat oil in a pan and sauté the onions with ginger and green chillies
Add salt and crushed black pepper to the eggs and whisk
Add the veggies back to the pan and sauté with the onions ( 1-2 mins)
Add the peppers, green peas and cucumbers
Add salt and pepper
Mix well and set aside
Add the eggs to the pan, whisk gently to make scramble
Add the bread pieces
Add 1 tbsp of oil from top and mix the egg with the bread
Add all the veggies back to the pan
Give it a good mix
Add salt if needed
Squeeze juice of half a lemon
Healthy and easy breakfast is ready to be served! Kids will love to eat and Moms will love to cook
Add Chilli flakes and serve with Tea, grownups won’t complain either
