Ingredients: 1 Jenny Craig Apple Cinnamon Oatmeal, 1/2 cup walnuts, 1/2 cup unsweetened coconut, 2 tbsp flax seed, 1/2 tsp ground cinnamon, 1/2 tsp vanilla extract, 4 ripe pears, nonfat whipped topping of choice for serving. In a food processor, combine the following ingredients: oats, flax seed, shredded coconut, walnuts, vanilla, cinnamon. Pulse until finely ground. Cut the pears in half lengthwise. Using a tablespoon, scoop out the cores. Fill each with 1/4 cup of the crumble topping, pressing lightly. Bake for 15 minutes. You’ll know they are ready when the topping is golden brown and the pears are tender. Top with a dollop of whipped topping. Simply pear-fection!
