Pesarattu Upma Recipe:

Pesarattu Batter:

Green Moong Dal (whole/split) – 1 Cup
Raw Rice – 2 tbsp
Onion (finely chopped) – 1 no
Green Chilli – 1 no
Ginger – 1 inch
Coriander Leaves – 2 tbsp
Salt – 1 tsp

Upma:

Oil – 2 tbsp
Mustard Seeds – ½ tsp
Urad Dal (split) – 1 tbsp
Curry Leaves – 2 Sprigs
Asafoetida (Hing) – A Pinch
Onion (chopped) – 1 no
Green Chilli (chopped) – 1 no
Ginger (chopped) – 1 inch
Salt – 1 ½ tsp
Rava – 1 Cup
Ghee – As Needed
Water – 3 Cups + 100ml(approx)

Cooking Instructions:

1. Wash and soak the dal for 3 hours.

2. Grind to a fine thick batter with ginger, coriander leaves and green chillies adding water little at a time, about 100 ml. Transfer to a bowl and add the coriander, onions and salt.

3. Roast the rava if it’s raw, the step can be skipped if roasted.

4. Add oil and splutter the mustard seeds, add the urad dal, curry leaves, asafoetida, green chillies and ginger ad saute for 2 minutes.

5. Add the onions and cook until translucent.

6. Add the rava, salt and water. Cook until it leaves the sides of the pan. About 5-7 minutes. Finish with a tsp of ghee.

7. To make the pesarattu, heat a skillet over medium flame, spread the pesarattu batter thin like a dosa, allow it to cook on both sides.

8. Spread the upma and allow it to cook for 3 minutes or until brown and crispy. Fold in half and serve.
