Bitter gourd is a rich source of antioxidants and contains polyphenols which helps lower inflammation in the body. I used a simple onion spice to stuff. Turned out delicious. Enjoy with soft roti, chapati, parathas or as a side dish along with dal & rice. Great vegetable to add into your healthy diet plan. Also aids with weigh loss. Include this if you follow Vegan or Plant-based diet.

Stuffed Bitter Melon / Stuffed Bitter Gourd / Bharwa Karela Recipe #shorts #shortsvideos
I used pressure cooker to cut cooking time. And just 1 tablespoon of oil for shallow fry in a pan for a crisp, golden brown texture.

Before Stuffing – wash and rinse the bitter gourd well. Wipe it dry with a cloth or paper towel. Make a slit using a knife. Cut vertically and remove the seeds from inside.
Optional TIPS – to cut down the bitterness, cut vertically and remove the seeds. Marinate the bitter gourd well with salt inside and out. Keep it aside for an hour. Then rinse well and pat it dry before stuffing.

Ingredients:
8 very small Bitter Gourd
1 large onion or 2 medium onion diced
2 teaspoon coriander powder
1/4th teaspoon turmeric powder
1 teaspoon red chili powder
2 teaspoon cumin powder (optional – use dry roasted cumin powder for more flavor)
2 teaspoon dry mango powder for some tanginess to cut through the bitterness
1 tablespoon fennel seeds crushed
Salt to taste

Directions:
In a pan, add a bit of oil. Add onion, and the rest of the spice. Saute until the onion is cooked very well along with the rest of the spice. Check to see the salt.
Now stuff the bitter gourd one by one with the onion spice mix.
Use a thread to tie to keep it intact
Add 1/4th cup water and 1 teaspoon of oil in the pressure cooker. Place the bitter gourd inside and cook in high until 1 whistle. Then turn the flame low and cook for 4 minutes. Let it cool down and once the pressure is released completely, open the lid and you should see them tender and soft.
Add 1 tablespoon oil to a pan. Place the soft bitter gourd in the pan and shallow fry until golden brown. Your Bharwa karela or stuffed bitter gourd is ready. Enjoy!
