Kerala red rice is considered the healthiest among rice for its increased quantities of minerals, vitamins, fibre and more. Here is a recipe using this rice which anybody can make. A breakfast variety from Malabar- Pathal. Serve this with stew,egg/chicken curry.
Ingredients
1 cup Matta rice (pre- soaked)
½ cup grated coconut
Water as required
Salt to taste
Method
1 Soak the rice overnight. Drain the rice
2 Add the rice into a mixer and grind it to rough paste
3 Add coconut and pulse for a minute
4 Season the batter
5 Heat a tawa pan and pour a little batter like a uttapam and cover and cook
6 Serve hot.
