🥬 Salad Recipe:
Spinach/Arugula Mix
Halved Grape Tomatoes
Cubed Cucumber
Almonds
Strawberries
Grilled Chicken (Oregano, Basil, Salt, Pepper, Avocado Oil)

🍋 Donna’s (My Mom’s) Secret Dressing:
1 part Lemon
2 parts Olive Oil
1 Tbsp Microplaned/Minced Shallot
Salt
Pepper

🍑 Banana Peach Smoothie:
1 Cup Cold Water/Almond Milk
2 Scoops Vanilla Protein Powder (See comments for link)
1 Banana (frozen is better but take the peel off before freezing)
1 Handful Spinach
1/2 Cup Frozen Peaches
1-2 Tbsp Chia Seeds (Ideally let these soak for at least 20 min so they don’t cause any blockages 🥴)
1/4 Cup Almonds

🐔 Donna’s Chicken Tortellini Soup (w.o Tortellini 😂)
1 Small Chicken
1 Onion (quartered)
4 Stalks Celery
4 Big Carrots (or 2 handfuls of baby carrots)
1.5 Cups of Rice
1 Big Handful of Spinach
1 Red Pepper (chopped)
Salt

Boil the chicken with onion, 2 stalks of celery, 2 carrots and (lots of) salt for an hour. Let cool and take the chicken off the bones. Add meat back to the broth. Skim the gross stuff off of the top. Cut up the rest of the celery and carrots and add to broth. Bring soup back to a boil. Add the rice (white rice will cook for around 20 min but brown rice will take longer). 6 minutes before the rice is done, add the chopped red pepper. The last minute before the rice is done, add the spinach. Taste the broth and add salt/pepper.

🍫 Chocolate Banana Raspberry Almond Butter Smoothie:
1 Cup Almond Milk
1 Tbsp Almond Butter (no added sugar)
1 Frozen Banana
1/4 Cup Frozen Raspberries
1-2 Tbsp Chia (Don’t forget to soak them!)
2 Scoops Vegan/Sugarfree Chocolate Protein Powder
Big Handful of Spinach

🥥 Good Morning Oatmeal:
1 Cup Gluten Free Oats (Thrive Market!!!)
1-2 Tbsp Flax Seeds
1-2 Tbsp Coconut Flakes
1 Sliced Banana
2 tsp Pure Maple Syrup
