INGREDIENTS:
Chickpea sandwich filling:
1 can of chickpeas
¼ cup of sunflower seeds
3 tbsp. vegan mayo or tahini
½ tsp. spicy mustard
¼ cup chopped red onions
2 tbsp. dill
Salt and pepper to taste

Lemon tahini herb sauce:
1 garlic glove, chopped
¼ cup tahini
2 tbsp. dill
½ lemon, juiced
¼ cup hot water

Bread and vegetables of choice.

PREPARATION:
1. Drain and rinse chickpeas, pat dry with a towel and transfer to a medium bowl and mash with a fork.
2. In the same bowl, add sunflower seeds, mayo or tahini, spicy mustard, red onion, dill, and salt and pepper. Mix well.
3. In a small bowl, add garlic, tahini, dill, lemon juice, and hot water. Mix thoroughly.
4. Toast 4 pieces of your favorite bread, scoop on the chickpea sandwich filling, and add the lemon tahini herb mayo. Add vegetables of choice.
5. Serve and enjoy!
