A healthy sandwich prepared with scrambled tofu, guacamole and veggies. Breakfast sorted!

SCRAMBLED TOFU SANDWICH

Ingredients

2 cups crumbled tofu
8 toasted multigrain bread slices
2 tbsps butter
3 tsps oil
A pinch of turmeric powder
½ cup fresh cream
Crushed black peppercorns to taste
Salt to taste
2 tbsps chopped fresh parsley
Guacamole as required
Tomato slices as required
Cucumber slices as required
Tomato ketchup for serving

Method

1. Heat butter and oil in a nonstick pan. Add turmeric power and mix well.
2. Add tofu and mix well. Add fresh cream, crushed black peppercorns and salt and mix well.
3. Add parsley and mix.
4. Apply guacamole on 4 bread slices and top up with prepared tofu mixture.
5. Arrange tomato slices on top. Sprinkle salt on top. Arrange cucumber slices on top. Sprinkle crushed black peppercorns on top. Cover with remaining bread slices.
6. Cut into desired shapes and serve with tomato ketchup.
