Whole Grain Bread Rolls Made With Spelt Flour
1 packet ¼ oz or 7g dry yeast
1 ½ cups of lukewarm water
2 tsp sea salt
3 cups of spelt flour
1 egg for glazing
Sesame seeds and zahtar (optional)
• Dissolve yeast in the warm water.
• Mix the salt with the flour.
• Add water with yeast to flour and mix well
• Put dough on floured board and knead it for about 8-10 minutes.
• Shape the dough into a ball put back into the bowl
• To prevent dough from drying out when rising, either cover bowl with plastic wrap or add a small amount of oil to the bowl and coat dough.
• Place bowl in a bread proofing drawer or a warm place and allow to rise for 90 minutes or up to 2 hours.
• Put the dough back onto the floured board and knead for a few minutes.
• Preheat oven to 350 degrees F.
• Form into 12 rolls and place on cookie sheet covered with parchment paper.
• Allow to rise for 30 minutes.
• Brush with slightly beaten egg.
• Sprinkle with sesame seeds and zahtar if desired.
• Bake for 10-12 minutes until browned
