Nothing says fall like Pumpkin Spice! Tis the season for pumpkin spice flavored everything! Check out my healthy vegan pumpkin spice energy bites recipe. They are super yummy and so easy to make. No baking is required! All you need is a food processor to make this snack/dessert! Did I mention this recipe only contains natural sugars and is part of a whole foods plant based diet! We hope you try this delicious fall snack! These are a perfect treat to serve at a holiday party, whether it be Halloween, Thanksgiving or Christmas! These delicious, nutritious treats taste like mini pumpkin pies without all of the added sugar and dairy!
Here is what you will need:
1/3 cup of pumpkin puree
1 cup pitted dates (soak for an hour beforehand)
1/4 cup unsweetened coconut flakes
1/2-1 cup chopped pecans (depending on how you like the texture)
2 TSP of Vanilla Extract
1 TSP of Cinnamon
1/4 TSP Cloves
1/4 TSP Nutmeg
How to make it:
Add all these ingredients to a food processor or blender. Mix for a few minutes on high.
scoop out the mixture into a bowl with a spoon or spatula.
If the consistency is a little too wet, just stir in more chopped pecans and coconut flakes into the mixture.
Start scooping out the mixture and rolling it into balls with your hands. But the balls onto a cookie sheet that has been lined with wax paper.
Let these chill in the refrigerate for an hour or so before serving.
