Bringing back my Easy, Healthy Chicken Pasta with a homemade Spinach Sauce. New adjustments to make it even better. Done in 25 minutes!
Pasta:
Water (to boil)
1 & 1/4 cup (85g) Pasta, whole grain
Season with Salt
Spinach Sauce:
3 heaping cups of Spinach
3 Garlic Cloves
2 tbsp Low Fat Cheese (I us mozzarella)
1 tbsp Light Cream Cheese
1/4 cup Pasta Water
Chicken:
2 Chicken Breast (approx. 5 oz. or 140-145g each)
Season with Salt, Pepper, Paprika, and Chili Powder
1/2 tsp Olive Oil OR Spray (to cook)
Optional Toppings:
Sprinkle of Feta Cheese
Crushed Chili Flakes
