The base of the salad as shown in the video is cabbage, romaine lettuce, carrot, and bell peppers. But feel free to add other veggies you love to this crunchy Asian salad. Really, there’s no right or wrong way to make shredded Asian salad. The only limit is your imagination and/or what’s in your fridge.
That being said, there are a couple of veggies and herbs, in particular, that we encourage you to keep in this simple Asian salad for their health benefits:
The first is the herb cilantro, due to its ability to help cleanse the body of toxic metals such as mercury, arsenic, and lead. We understand that cilantro isn’t everyone’s favorite — to some people it tastes soapy. If cilantro tastes bad to you, then omit it. But if it doesn’t, it’s a good source of iron, magnesium, and manganese, as well as having anti-inflammatory and antioxidant properties.
The other important ingredient in this salad is cabbage, which is an excellent source of vitamins K, C, and B6. It’s also a good source of fiber, manganese, potassium, vitamin B1, folate, and copper. If cabbage just isn’t your thing, substitute leafy greens, or even some shredded broccoli or cauliflower. The dressing really is so good you can use it on almost any salad fixings.
Speaking of the dressing, this chopped Asian salad is simply bursting with flavor. We guarantee you’ll love the creamy yet zingy dressing with the extra kick of ginger. Why not make a double batch and use it as a sauce for stir frys, rice, and to dress up other recipes.
