Whole Wheat and Oats Banana Bread | Great with Coffee | Healthy Snack | Good with Tea

Ingredients
5 tbsp melted virgin coconut oil cold pressed and unrefined
½ cup heaped jaggery powder or ½ cup raw cane sugar
2 eggs
3 small overripe/ripe bananas or 2 large ones cut into pieces
¼ cup of any kind of milk
1 tsp vanilla extract
1 cup whole wheat flour
3/4 cup roasted and ground oats flour
1 tsp baking soda (NOT baking powder)
½ tsp salt
½ tsp ground cinnamon
½ cup chopped walnuts

Method
Grease or line 8 by 5” loaf pan with parchment paper.
In a large mixing bowl, beat the oil and jaggery or sugar together with a hand mixer or whisk.
Add the eggs and beat well,then add vanilla extract followed by bananas and beat well to get a smooth mixture.
Preheat the oven to 325 deg F (165 deg C).
Take a sieve and sift whole wheat flour,cinnamon,salt and baking powder in the bowl with the liquid mixture.
Next add oats flour and gently combine everything together.
Add milk little by little and stir gently, add in some chopped walnuts save the rest for garnishing.
Transfer the batter in the loaf pan and garnish with the remaining walnuts.
Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the loaf pan for 10 minutes, then transfer it to a wire rack to cool before slicing.

Notes:
Tsp- Teaspoon
Tbsp- Tablespoon
Do not mash bananas before hand as they will turn dark if not used immediately
I always bake on the middle rack of the oven for even baking.
Baking time may differ as per oven.
Always put a bowl with water in the oven while baking to prevent it from drying
